- 2 Tbsp. Salt
- 2 Tbsp. Sugar
- 1 Tbsp. Plus 1 1/2 tsp. soy sauce
- 1 1/2 Tbsp. Onion pwdr
- 1 1/2 Tbsp. Ginger, grnd
- 1 Tbsp. Garlic pwdr
- 1 Tbsp. Lemon peel, grated
- 1 Tbsp. Lime peel, grated
- 1 1/2 tsp White pepper
- 1 1/4 tsp Cardamom, grnd
- 1 1/4 tsp Cinnamom, grnd
- 1 1/4 tsp Nutmeg, grnd
- 1 1/4 tsp Savory
- 3/4 tsp Habenero chiles, dry and grnd
- 4 x Bay leaves
Инструкции
- Combine seasoning ingredients into a paste and rub each chicken piece with the paste. Place the chicken in a covered dish and let stand in refrigerator for 8 hrs. Remove as much of paste from chicken as possible and place back into bowl which chicken was in. Add in 4 Tbsp. of butter to bowl and fold in seasoning paste. Grill chicken over medium coals, basting frequently with seasoning-butter paste.
