- 4 lb Grnd beef chuck
- 2 Tbsp. Extra virgin olive oil
- 4 x Onions, med, finely minced
- 4 can Tomato paste (6 ounce ea)
- 4 x Garlic cloves,chopped
- 1 tsp Mixed pickling spice
- 1 c. Dry white wine
- 1 Tbsp. Salt Freshly grnd pepper

- Using a large frying pan, brown meat in 1 Tbsp. extra virgin olive oil till it loses its pink color. Transfer to crockery pot. Add in remaining extra virgin olive oil to pan. Saute/fry` onions till glazed. Transfer to crockery pot. Add in tomato paste, garlic, pickling spice, (put in a tea ball or possibly tie in a cheesecloth bag), wine, salt, and pepper. Cover. Cook on LOW 8 hrs. Stir once or possibly twice. Cold slightly. Ladle into freezer containers, or possibly serve warm.

- NOTE: This meat sauce is great for various dishes: spaghetti, moussaka, and the Greek mararoni dish, Pastitsio. It is also good spooned over tacos or possibly ladled inside avocado half shells.
