- 1/2 pound chicken
- 2/3 c. uncooked rice
- 1/2 teaspoon salt
- 2 Large eggs, beaten
- 3 tbsp. lemon juice
- 2 tbsp. snipped parsley or possibly chives
- 2 quarts. broth

- Dice chicken, add in homemade or possibly canned broth, rice and salt, bring to a boil reduce heat and simmer 15 min till rice is tender. Mix Large eggs and lemon juice. Stir 1/4 c. of the warm broth into egg mix; stir into broth mix in saucepan. Cook and stir over low heat till slightly thickened, 2 to 3 min. Don't boil or possibly Large eggs will curdle. Garnish with parsley or possibly chives.
