- 1½ cups all-purpose flour, (Nany used Kinnikinnick all purpose gluten free flour) , plus more for rolling the dough
- 2 teaspoons baking powder (check that it's gluten free)
- 2½ teaspoons kosher salt
- 1 large egg, beaten
- 2 tablespoons -extra--virgin olive oil , plus more for cookie sheet
- 12 ounces fresh mozzarella, thinly sliced (Nancy used fresh mozzarella from the Italian Centre and it made a world of difference)
- 4 cherry or other small tomatoes, thinly sliced
- 1 teaspoon dried oregano
- ¼ cup grated Grana Padano or Parmigiano Reggiano
