- 1 med Green Bell pepper, diced
- 1 med Red Bell pepper, diced
- 1 med Yellow Bell pepper, diced
- 4 stalk celery, diced
- 2 x Cucumbers, peeled and diced
- 28 can Plum tomatoes, minced with liquid
- 6 Tbsp. Lemon juice
- 2 Tbsp. Extra virgin olive oil
- 3 c. Cool water
- 1/4 c. Italian parsley, minced
- 1/2 c. Fresh basil, minced
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp. Tabasco sauce

- Combine all ingredients; mix well. Adjust seasonings. Serve chilled
- NOTES : Variations: For a richer taste, add in 2 to 3 Tbsp. tomato paste and a splash of red wine vinegar.
