- Fresh or possibly frzn fruit (peaches, apricots, raspberries, etc.), sliced, sufficient to fill a qt freezer bag
- 1/4 c. tapioca Sugar to taste Juice of 1/3 lemon
- 1 c. sugar
- 1 c. flour
- 2 tsp baking pwdr Healthy pinch of salt
- 1 c. lowfat milk
- 1 cube butter Cinnamon or possibly sugar to taste

- Heat fruit in a saucepan over medium heat. Add in sugar to taste, tapioca and lemon juice. Take off heat and let stand for 15 min.
- Combine 1 c. sugar, flour, baking pwdr, lowfat milk, and salt.
- Heat butter in 9 x 13 inch casserole dish and top with batter. Spoon fruit mix over top. Sprinkle with cinnamon or possibly sugar to taste.
- Bake 45 min at 350 degrees.
- Serves 6-8.
