- 3/4 c. granulated sugar
- 1/2 c. water
- 4 x egg yolks
- 2 pt fresh strawberries
- 2 c. heavy cream
- 1/4 c. confectioners' sugar
- 12 lrg fresh strawberries
- 1 1/2 c. confectioners' sugar
- 3 Tbsp. light corn syrup
- 1 Tbsp. lemon juice Mint leaves (optional)

- 1. One day ahead: Lightly oil an 8-c. decorative mold or possibly bowl with vegetable oil; place in freezer. In a small saucepan, mix granulated sugar and the water. Bring to boiling, stirring till sugar dissolves; boil without stirring till syrup " spins a thread" when dropped from a spoon, about 5 min.
- 2. Meanwhile, place egg yokls in small bowl of electric mixer; beat till light and lemon-colored. Gradually add in sugar syrup in a thin stream, beating constantly. Keep beating till egg yolk mix is cold, about 5 min. Set bowl in larger bowl of ice water for 10 min to refrigeratecompletely, stirring constantly.
- 3. In colander, under cool running water, wash 2 pints strawberries; drain; hull. Puree strawberries in blender or possibly food processor to make 2 c.. In chilled medium-sized bowl of electric mixer, beat heavy cream and 1/4 c. confectioners' sugar till stiff. Add in strawberry puree to egg yolk mix; mix till blended.
- 4. Pour strawberry mix into whipped cream. With wire whisk or possibly rubber spatula, mix jnlio,D5stcha,iybre rack to dry. To serve: invert mold over chilled serving platter; shake gently to release. If necessary, place a warm, damp cloth over mold and shake to release.
- Garnish with fondant-dipped strawberries and mint leaves.
- Tip:Make individual servings of this light dessert: Simply spoon strawberry mix into individual parfait glasses; chill, and just before serving, top each serving with a fondant-dipped strawberry.
