  • For 6 people (I find this a bit small so add in 1/2 the ingredients again).
  • 1 pkt trifle sponges (8 sponges)*
  • 4 x Large eggs (separated)
  • 4 ounce unsalted butter (room temp)
  • 2 lrg lemons
  • 6 ounce caster sugar
  • 1/2 pt double cream A casserole dish or possibly 2pt pudding basin

  1. *If you can't get trifle sponges, then any sponge/Madeira cake cut into pcs will do.
  2. In a large mixing bowl, cream the butter and sugar until very pale and fluffy, then whisk the egg yolks and beat them into the butter and sugar mix, a teaspoonful at a time, beating well after each addition. (An electric whisk is best for this operation).
  3. Now, add in the grated rinds of both lemons and their juice, beating in a little at a time. Next whisk the egg whites until they form soft peaks, then using a metal spoon fold them into the mix. Do not worry about the mix curdling at this point because for once, it doesn't matter.
  4. Split the sponge cakes in half lengthways, then place a layer of them in the base of the bowl/dish, followed by a layer of the curdled mix - and so on, finishing off with a layer of sponge. Now cover with foil and put a pile of plates on top, then chill overnight.
  5. To serve, turn out, cut into slices and serve with pouring cream.
  6. Alternatively, when the cake is turned out you could cover it with whipped cream and decorate with crystallized lemon slices, grated lemon rind or possibly chocolate - or possibly all three!
