- 1 1/2 lbs. grnd beef
- 3/4 c. soft bread crumbs
- 1 egg
- 1 1/4 teaspoon salt, divided
- 1/8 teaspoon pepper
- 10 ounce pkg. frzn minced spinach, defrosted & liquid removed thoroughly
- 1/2 c. Mozzarella cheese, shredded
- 3 T Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/8 teaspoon garlic pwdr
- 3 T catsup

- Lightly, but thoroughly put together meat, crumbs, egg, 1 tsp salt and pepper. Put together spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, Italian seasoning, remaining salt and garlic pwdr.Place beef mix on wax paper and pat into a 14 x 10 inch rectangle. Spread spinach mix over beef to 3/4 inches from edge on the sides. Roll up from short end (jelly roll style) to enclose spinach filling. Press beef mix over ends to seal. (Remove wax paper.)
- Place loaf, seams down, on rack in roasting pan. Bake in 350 degree oven for 1 hour. Spread catsup over loaf and continue baking 15 min longer. Slices beautifully.
