- 1 1/2 c. Sugar
- 2 can Condensed lowfat milk
- 2 can Fresh lowfat milk (pour into empty condensed lowfat milk can to measure)
- 8 x Large eggs
- 1 tsp Vanilla
- 1 tsp Almond extract
- 1/4 tsp Salt
- 1 Tbsp. Amaretto or possibly almond liqueur
- 6 x Oranges - (6 to 8) peeled, and cut into sections
- 3 pt Strawberries - (3 to 4 pints) stems left on, if you like

- Preheat the oven to 325 degrees.
- To make the caramel, heat the sugar in a medium-sized skillet over medium heat. When the sugar begins to heat, reduce the heat to low and continue cooking till the sugar has melted and browned. Spoon or possibly pour the caramel over the bottom of a 3-qt oval baking dish and tilt the dish so which caramel spreads proportionately around the sides. The caramel hardens as it cools, so work quickly.
- In a bowl whip the Large eggs gently till smooth and then add in the condensed lowfat milk, fresh lowfat milk, vanilla, almond extract, salt and Amaretto, and whisk till smooth. Strain the mix through a sieve into the caramel-coated baking dish. Set the mold in a larger pan of hot water. The water must reach half the depth of the mold. Cover the flan loosely with foil to prevent it from overbrowning.
- Bake for 1 1/2 hrs till the center feels just hard when pressed. Remove from the water bath and allow to cold. Refrigeratein the refrigerator till serving.
- Unmold by placing a large decorative platter over the mold, and using both hands, flip the mold over onto the platter. Remove the mold and decorate the flan with orange sections and strawberries.
- This recipe yields 16 to 20 servings.
