- 1 c. round buttery cracker crumbs (38 crackers)
- 1/2 c. shredded Parmesan cheese
- 1 tsp freshly-grnd black pepper divided
- 1 c. mayonnaise
- 3 x garlic cloves pressed
- 4 x orange roughy fillets - (4 to 6 ounce ea)
- 1 jar roasted red bell peppers - (7 ounce) undrained

- Stir together cracker crumbs, Parmesan cheese, and 1/2 tsp. pepper. Combine remaining 1/2 tsp. pepper, mayonnaise, and garlic.
- Reserve 1/2 c. mayonnaise mix, and spread remaining mix proportionately over fish fillets. Dredge fish in crumb mix, and place in a shallow pan.
- Bake at 400 degrees for 15 to 20 min or possibly till fish flakes easily with a fork.
- Process reserved 1/2 c. mayonnaise mix and bell peppers in a blender or possibly food processor till smooth, stopping to scrape down sides. Serve over fish.
- This recipe yields 4 servings.
