- nibbles filo pastry melted butter

- Unwrap the filo pastry and cut some squares.
- The most economical size will depend upon your type of filo, but approximately 3"/7.Scm square.
- Re-cover the stack of filo pastry not being used in order to prevent drying out.
- Brush melted butter on the first sheet of filo. Lay a second square on top at an angle to create a star shape, and brush with butter. Lay on a third quare, again at an -angle so which all 12 points are showing.
- Lift and gently ease into a well-buttered muffin tin.
- Press into the shape of the tin and have the excess pastry edges standing upright. When the tray is complete, bake on the floor of the roasting tin for 8 to 10 min till golden and cooked through.
- Allow to stand for a few min before removing each case to a cooling rack.
- Fill as required.
- filling ideas:1 tsp hollandaise sauce topped with thin slivers of smoked salmon cream cheese topped with half a strawberry smoked mackerel pate softened with a little greek lowfat yoghurt topped with a tiny parsley sprig
- Make these in small 40mm diameter bun/muffin tins.
