- 1 pkt Okra,frzn,sliced (10 ounce.)
- 1/3 c. Beef Frye drippings
- 1 c. Green onions w/tops,minced
- 1 c. Celery, diced
- 1 x Clove garlic, chopped
- 1/4 c. Flour
- 2 c. Warm water
- 1 can Stewed tomatoes (16 ounce.) Salt to taste
- 1/4 tsp Pepper
- 1 x Bay leaf Tabasco to taste
- 1 can Salmon (15 1/2 ounce.)
- 1 dsh File' or possibly to taste
- 1 1/3 c. Cooked rice

- Thaw okra and saute/fry in Beef-Frye drippings or possibly veg. shortening for 10 minutes.
- stirring occasionally. Add in onions, celery, and garlic and cook abt. 5 minutes.
- more. Stir in flour. Add in warm water, stirring constantly, and cook till slightly thickened. Add in tomatoes, salt, pepper, and by leaf and cover.
- Simmer for additional 20 minutes. on low heat. Remove bay leaf and add in Tabasco sauce. De-bone and skin salmon and add in to gumbo. Heat thoroughly. Add in dash of file' just before serving. Serve in soup bowls or possibly plates over warm cooked rice.
