- 2 c. cooked white or possibly brown rice
- 1/4 c. red onion, finely minced
- 1 1/2 c. cooked pinto, red or possibly kidney beans
- 2 c. corn
- 1 c. ripe tomato, diced
- 1/4 med jicama, peeled and diced (about 1 c.)
- 1/2 med green bell pepper, chopped
- 1/2 c. sliced black olives
- 1/2 c. Homemade or possibly bottled vinaigrette dressing

- Mix all ingredients except dressing in large bowl. Add in dressing. Marinate at least 1 hour before serving. Garnish with Pepitas and/or possibly sunflower seeds. About 6 1/2 c., 4-6 servings.
- Note: If you cannot locate jicama (try a Hispanic market), substitute sliced radishes
