• 1 lb grnd lamb
• 1/2 tsp lemon zest (or possibly orange zest)
• 1 Tbsp. lemon juice (juice from 1/2 a lemon)
• 2 tsp sherry or possibly orange juice
• 2 tsp soy sauce
• 1 1/2 clv garlic, finely chopped
• 1 tsp thyme
• 1 tsp salt
• 1 tsp black pepper
• 1/4 tsp warm red pepper sauce
• 2 Tbsp. extra virgin olive oil
