- 2 lb Sea scallops
- 2 Tbsp. Extra virgin olive oil
- 1/4 Tbsp. Warm pepper flakes
- 2 x Cloves garlic, finely minced
- 1 Tbsp. White wine
- 1 Tbsp. Curry pwdr
- 1 sm Tomato, peeled seeded and minced
- 1/4 c. Heavy cream
- 2 Tbsp. Tabasco sauce Salt and pepper to taste
- 1 Tbsp. Parsley, finely minced

- 1. First, pour some extra virgin olive oil into one of the skillets on the range top.
- 2. Then, add in the red pepper flakes, garlic and white wine.
- 3. Add in all of the sea scallops to the skillet.
- 4. Cover the pan and let the scallops cook over med/high heat till the scallops become hard and opaque (2 to 4 minutes.) shaking the pan occasionally.
- 5. Remove the pan from the heat and transfer the scallops to a large serving bowl. Set aside, making sure to reserve some of the liquid.
- 6. Add in 1 tbsp. oil and the curry pwdr to a small saucepan and cook for 1-2 min.
- 7. Add in the reserved scallop liquid to the saucepan of oil and curry by straining 3/4 c. of it through a cheesecloth or possibly a coffee filter.
- 8. To the same saucepan, add in the tomato pcs, cream, Tabasco, salt, pepper and parsely, and heat for 2 to 3 min.
- 9. Spoon some of the scallops onto a plate and then pour contents of the small saucepan over scallops.
- 10. Serve with angel hair pasta, crusty bread, green salad and a lovely white wine.
