- 1 (4-5 lb.) duckling
- 1 c. maple syrup
- 2 apples
- 4 strips bacon
- Salt & pepper to taste

- Wash and clean duckling. Place iron skillet on fire and heat till very warm. Place 1 cut up apple inside duckling and tie legs together. Rub duckling with salt and pepper and place in skillet. Turn duckling till it is blackened proportionately. Remove from flame, and stand duckling with legs up in skillet. Place skillet with duckling in 400 degree oven for 1 hour and 20 min. When duckling is cooked, remove from pan and cut in half. Remove apples and rib bones. Place skin side up on cookie sheet with 2 strips of bacon on each half of duckling. Return to oven. When bacon is cooked, place duckling on hot serving platter. Top with fresh sliced apple and heated maple syrup. Serve with rice.
