- Wash apricots. Cover with cool water and soak overnight. Simmer till tender in water in that they were soaked. Mash apricots and add in pineapple, lemon and sugar. Simmer, stirring frequently, till thick and clear. Pour into sterilized Kerr jars to within 1/4 inch of top. Put on cap, screw band firmly tight. Process in boiling water bath 10 min. Yields 5 (8 oz) jars.
