  • 1 quart Packed solid, fresh-picked Dandelion blossoms, Yellow flower ONLY-NO Greens
  • 9 lb Sugar
  • 1 pkt Dry yeast Or possibly 1 Cake of compressed yeast
  • 3 x -1/2 gallons Water
  • 1/2 c. Lemon juice -- Fresh squeezed
  • 3 lrg Navel oranges
  • 3 lb White raisins

  1. Pour 1/2 gallon of boiling water on the blossoms and let stand for 24 hrs at room temperature. Squeeze juice from lemons and oranges. Cut the rind of the lemons and oranges in 1/2 n 3/4 inch square pcs or possibly small wedges. Strain or possibly gently press blossoms to extract juice. Throw away blossoms when done. Heat blossom juice to luke hot. Add in dissolved yeast, sugar, lemon and orange juice to blossom juice. Heat to luke hot, the rind of lemons, oranges, and the raisins in 1/2 gallon of water, it enhances the flavor and the juice. Put all of the ingredients (steps 5n7) into a large (5 gallon) container or possibly stone crock. Add in 3-1/2 gallons of hot water (no more than luke hot). Let work for 10-14 days.
  2. Keep covered with a clean cloth between stirrings. Stir often (with wooden spoon or possibly oak paddle), 1-3 times a day, as the raisins will float, and so it doesn't get musty. Strain or possibly press and put in gallon jugs with gas traps or possibly balloons (don't seal bottles). Keep in jugs for 4-6 weeks, or possibly till it stops working. Carefully pour or possibly siphon off clear wine with no sediment, into permanent storage bottles which can be corked or possibly sealed for long term storage. Cork, seal, label and date. Remaining wine in heavy sediment can be clarified by pouring into tall, thin bottle and let sit overnite. Then siphon off clear wine again. Throw away remaining sedimentary wine (see Note). Don't mix Second-siphon with First-Siphoned wine. Bottle this separately. Cork, seal, label and date NOTE: Repeat steps 8-16, adding 1-2 gallons (instead of 3-1/2) of luke hot water to "pressings" and sedimentary wine and above to make a "Second Press" batch. It will not be as good as the first, but it should be drinkable
