%3C/p%3E%3Cp%3EThick%20noodles%20=%20yum!%20Thing%20is..%20Asian-style%20noodles%20are%20my%20teen's%20least%20favourite%20food.%20Yet%20she%20loves%20a%20bowl%20of%20spaghetti.%20Last%20week%20we%20had%20%22noodle%20time%22%20however,%20when%20my%20girl%20attended%20a%20birthday%20party%20which%20included%20a%20ride%20on%20an%20'Amphibian%20boat'.%20Have%20you%20heard%20of%20those%20buses%20that%20drive%20from%20land%20straight%20into%20the%20water?%20It%20meant%20I%20had%20the%20'all%20clear'%20to%20open%20my%20packet%20of%20Hokkien%20noodles%20before%20hubby%20went%20off%20to%20his%20afternoon%20shift.%20These%20days%20I%20sometimes%20need%20to%20cook%20dinner%20hours%20in%20advance..%20like%20at%2011am!%20I%20know%20it'd%20be%20easier%20to%20have%20something%20prepared%20in%20advance..%20and%20I%20sometimes%20do,%20but%20not%20always.%20So%20I%20had%20noodles%20and%20I%20had%20a%20chunk%20of%20pumpkin%20that%20needed%20to%20be%20used%20too.%20I%20started%20'snapping%20away'%20with%20my%20mobile%20phone%20camera%20'just%20in%20case'.%20Just%20in%20case%20it%20led%20to%20%22Darlin'%20I%20think%20this%20might%20be%20recipe%20of%20the%20week%22.%20Once%20I%20tasted%20the%20slightly%20caramelised,%20cubed%20and%20cumin-ified%20pumpkin%20pieces..%20I%20set%20the%20mobile%20phone%20aside%20and%20my%20real%20digital%20camera%20superseded%20it.%3C/p%3E%3Cp%3EIn%20my%20neck%20of%20the%20woods%20we've%20had%20some%20very%20warm%20weather..%20so%20if%20you're%20not%20up%20for%20a%20hot%20meal,%20consider%20eating%20these%20noodles%20cold%20as%20a%20salad.%20Easily%20done..%20keep%20reading.%3C/p%3E%3Cp%3ECumin%20Pumpkin%20Noodles%20with%20Ginger%20&%20Lime%20(Hot%20or%20Cold)%3C/p%3E%3Cp%3EServes%202%20or%203%20as%20a%20main%20meal%3C/p%3E%3Cp%3E*500gram%20piece%20of%20pumpkin%20-peeled%20&%20diced%20into%20small%20pieces%20(ie.%20not%20500grams%20after%20peeling)%20Feel%20free%20to%20cut%20the%20pumpkin%20into%20larger%20dices%20than%20you%20see%20in%20my%20photo.%20They%20can%20easily%20disintegrate%20if%20over-cooked%20so%20if%20the%20pieces%20are%20too%20small%20you%20might%20not%20taste%20them%20among%20all%20the%20other%20ingredients.%20Just%20be%20sure%20to%20increase%20your%20cooking%20time%20with%20larger%20pieces,%20being%20careful%20not%20to%20burn%20them.%20Pumpkin%20can%20stick%20and%20burn%20in%20your%20pan%20quite%20easily%20if%20care%20isn't%20taken.%3C/p%3E%3Cp%3E*3%20spring%20onions%20chopped%20into%203cm%20chunks%3C/p%3E%3Cp%3E*3%20baby%20bok%20choy%3C/p%3E%3Cp%3E-Chop%20noodles%20(from%20packet)%20into%204%20pieces%20and%20separate%20roughly%20with%20your%20fingers%20in%20a%20large%20bowl.%20Cover%20with%20water%20from%20a%20'just-boiled'%20kettle%20&%20let%20sit%20for%2010%20minutes%20before%20draining%20&%20setting%20aside.%3C/p%3E%3Cp%3E-Saute%20pumpkin%20pieces%20in%20some%20oil%20for%205%20minutes,%20add%20cumin,%20stir%20and%20cook%20a%20minute%20and%20add%20water.%20Cook%20about%20another%20minute%20on%20medium%20to%20high%20heat%20then%20set%20aside%20on%20a%20plate%20(off%20the%20heat).%3C/p%3E%3Cp%3E-Rinse%20pan%20with%20some%20water%20&%20wipe%20out%20with%20a%20paper%20towel%20(be%20careful%20not%20to%20burn%20yourself)%20&%20return%20to%20stove.%3C/p%3E%3Cp%3E-Saute%20onion%20until%20soft%20and%20add%20spring%20onions%20&%20chopped%20bok%20choy%20stems%20&%20pinch%20of%20salt%20(keep%20chopped%20leaves%20separate%20until%20later).%20The%20salt%20will%20flavour%20your%20ingredients%20but%20also%20soften%20them%20more%20quickly.%20It'll%20take%20about%202%20or%203%20minutes.%3C/p%3E%3Cp%3E-Add%20ginger,%20garlic%20&%20chilli%20flakes,%20cook%20another%20minute%20or%20two%20and%20put%20pumpkin%20back%20in%20the%20pan.%20Sprinkle%20over%20vegetable%20stock%20powder%20and%20lime%20zest%20&%20stir%20for%20another%20minute.%3C/p%3E%3Cp%3E-Add%20drained%20hokkien%20noodles%20&%20chopped%20bok%20choy%20leaves,%20stir%20well%20and%20heat%20through%20for%20a%20couple%20of%20minutes.%3C/p%3E%3Cp%3E-Add%20soy%20sauce,%20oyster%20sauce,%20sweet%20chilli%20sauce%20and%20sesame%20oil,%20continue%20stirring%20on%20the%20heat%20through%20for%20another%20minute.%3C/p%3E%3Cp%3E-Add%20coriander%20&%20shredded%20basil,%20stir%20well..%20and%20serve%20noodles%20hot%20with%20a%20lime%20wedge.%3C/p%3E%3Cp%3ENOODLE%20SALAD%20OPTION:%3C/p%3E%3Cp%3ENot%20everyone%20likes%20cold%20bok%20choy%20as%20it%20can%20feel%20slimey%20on%20the%20palate.%20Feel%20free%20to%20omit%20the%20bok%20choy%20if%20you%20want%20to%20make%20this%20for%20a%20salad.%20Make%20recipe%20as%20above%20but%20when%20noodles%20are%20finished%20stir%20through:%3C/p%3E%3Cp%3E-1%20thinly%20chopped%20stick%20of%20celery%3C/p%3E%3Cp%3E-A%20handful%20of%20fresh%20bean%20shoots%3C/p%3E%3Cp%3E-A%20pinch%20or%20two%20of%20sesame%20seeds%3C/p%3E%3Cp%3EStir%20well,%20&%20cool%20to%20room%20temperature%20before%20refrigerating.%20Before%20serving,%20squeeze%20over%20some%20fresh%20lime%20juice%20&%20add%20one%20to%20two%20teaspoons%20of%20Rice%20bran%20o
