Butter beans (another name for Lima beans) are super healthy and flavorful. I've been looking for a simple and flavorful way to cook these, and after a lot of research I found and adapted this delicious recipe. This is flavorful and hearty enough to make a full meal out of, probably accompanied by a salad or green vegetable and some crusty bread. Or serve it as a side with another entree. You can throw it together in 15 minutes which is really amazing given the flavor.

  • 2 tablespoons extra-virgin olive oil or butter
  • 1 small onion chopped, about 1/3 cup
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped celery
  • 1 jalapeno pepper, seeded and finely chopped
  • 15-16 ounces butter beans, canned or frozen drained or thawed (I used a can)
  • 1 can (14.5 ounces) tomatoes, diced
  • 1/4 teaspoon dried leaf thyme
  • 1/4 teaspoon black pepper
  • a few dashes hot pepper sauce or pinches of cayenne pepper to taste
  • chopped fresh flat leaf parsley for garnish (optional)

  1. Heat oil or butter in a medium saucepan or saute pan over medium heat. Saute the onion, green pepper, celery, and jalapeno until tender but still crisp, about 3 minutes. Stir in the tomatoes with juices, beans, thyme, black pepper, and hot pepper sauce.
  2. Bring to a boil, reduce heat, and simmer for 10 to 15 minutes. Sprinkle with parsley before serving, if desired.

        Making it again tonight and I like the idea of the canned beans since we live in a high altitude area and you have to do fresh beans in a pressure cooker. I use orange or yellow bell pepper in place of green and a few dashes of ground cumin.

          I make a dish like this but just add canned corn beef and a little sugar for the tomatoes and tomatoe paste. LOVE IT!!

          Made these for a group dinner and they were delicious. I used a red pepper in place of the bell pepper but otherwise followed the recipe. Will make again.

            I am glad to find out butter beans & limas are the same...my dad used to make a dish very similiar to this when I was a kid and it was one of my faves, but I think without the hot stuff. I haven't had limas in years and am going to try this as soon as I get to the grocery store!! Thank you John!

            We don't like anything too spicy, this sounds too hot??? especially for kids. Wish you would say what degree of heat it is.

              Hi Peggy...this isn't too hot. Make sure that you seed the jalapeno and don't add much hot pepper sauce if you want to keep it mild. If you if you really want it mild, hold off on the jalapeno altogether and use more bell pepper or something in between like a poblano pepper.
