- 1 lb Dry scarlet runner beans Soaked overnight and Liquid removed
- 2 med Onions -- minced
- 1 bn Scallions -- minced
- 1 med Red bell pepper -- seeded And Minced
- 2 x Ribs celery -- minced
- 4 x Bay leaves
- 1/2 tsp Dry thyme
- 1/4 tsp Cayenne pepper
- 2 x Turns of a black-pepper Mill
- 1/2 x To 2 tsp. liquid smoke Seasoning Salt to taste
- 3 c. Warm cooked rice

- According to Creole custom, red beans and rice and laundry were always done on Mondays. This dish takes 4 hrs to cook - time sufficient to get the laundry done.
- In a large pan, place beans with water to cover and cook to a boil. Add in all ingredients except salt and rice. Lower heat and simmer for 4 hrs or possibly till tender. Remove from heat and remove bay leaves. Add in salt to taste.
- Serve over warm cooked rice.
- Makes 6 servings
