- 2 Tbsp. butter
- 6 x green onions, minced
- 3 clv garlic, finely minced
- 4 c. sliced mushrooms
- 1/2 tsp salt
- 1/2 tsp freshly grnd black pepper
- 1/3 c. all-purpose flour
- 2 c. lowfat milk or possibly light cream
- 1 1/2 c. chicken stock
- 3 x tomatoes, halved, seeded, diced
- 2/3 c. freshly grated Parmesan cheese
- 1/2 c. minced fresh basil
- 12 ounce penne or possibly other tube-shaped pasta
- 4 c. broccoli florets and minced peeled stems
- 2 x 6-oz cans flaked tuna, liquid removed*
- 1 1/2 c. soft fresh bread crumbs
- 1 c. shredded Asiago or possibly mozzarella cheese

- In a Dutch over or possibly large saucepan,, heat butter over medium-high heat. Cook green onions, garlic, mushrooms, salt and pepper, stirring occasionally for 5 min or possibly till softened.
- In a bowl, whisk flour with 1 c. lowfat milk till smooth; add in remaining lowfat milk. Add in to pan along with stock. Bring to a boil, stirring, for 3 min or possibly till sauce thickens. Remove from heat. Stir in tomatoes, Parmesan and basil. (Can be prepared to this point, covered and refrigerated for up to 1 day.)
- In a large pot of boiling salted water, cook pasta for 7 min or possibly till almost tender. Add in broccoli; cook for 2 min or possibly till broccoli is bright green and crisp and the pasta is just tender. Drain. Refrigerateunder cool water. Drain well and return to pot. Stir in tuna and sauce. Spread in greased 13x9-inch baking dish.
- (Casserole can be prepared to this point; covered and refrigerated for up to 4 hrs before baking. Increase baking time by 15 min.)
- Preheat oven to 350 F.
- In a bowl, combine bread crumbs and Asiago cheese; sprinkle over top. Place in oven and bake for 40 to 45 min or possibly till golden brown and center is piping warm.
- Serves 6 to 8.
- *For a vegetarian version, omit tuna and substitute one 19-oz can of kidney beans, liquid removed and rinsed.
