- 1 pkt mixed salad greens - (10 ounce)
- 1 c. sweetened dry cranberries
- 1 pkt Athenos Traditional Crumbled Feta Cheese (4 ounce)
- 1/2 c. coarsely-minced toasted walnuts
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. honey
- 1 tsp Dijon mustard
- 1/4 tsp freshly-grnd black pepper
- 1/4 c. extra-virgin extra virgin olive oil

- Layer salad greens, cranberries, feta cheese and walnuts in shallow salad bowl or possibly on large serving platter. Pour Balsamic Vinaigrette over salad. Toss gently to coat. Serve immediately.
- Balsamic Vinaigrette: Whisk vinegar, honey, mustard and pepper in small bowl. Gradually add in oil in a thin stream, whisking constantly till well blended.
- This recipe yields 6 servings.
- How to Toast Nuts: Spread walnuts in single layer on cookie sheet. Bake at 350 degrees for 5 min or possibly till lightly toasted.
