- 20 x Gingersnap cookies
- 1 1/2 Tbsp. Margarine
- 2 x McIntosh apples pare/core
- 1 c. Fresh cranberries
- 5 Tbsp. Dark brown sugar
- 1/4 tsp Vanilla extract
- 1/4 tsp Grnd cinnamon
- 1 tsp Granulated sugar

- Preheat oven to 375F. Place gingersnaps and margarine in food processor; process till finely grnd. Press gingersnap mix into 8" pie plate.
- Bake 5-8 minutes; remove and cold crust. Chop apples in food processor. Add in cranberries, brown sugar, vanilla and cinnamon; pulse till just mixed.
- Spoon apple-cranberry filling into another 8" pie plate or possibly casserole dish.
- Sprinkle with granulated sugar. Bake 35 minutes or possibly till tender. Spoon filling into gingersnap crust and serve immediately.
