- 3 c. tart apples peeled and diced
- 1 c. cranberries
- 1 1/4 c. sugar
- 1 c. brown sugar
- 1 c. golden brown raisins
- 1/2 c. coarsely minced walnuts or possibly pecans
- 1/2 c. cider vinegar
- 1 x orange sliced very thin and halved
- 1/4 tsp each: mace curry pwdr, cloves, allspice
- 1/4 c. preserved ginger minced
- 4 clv garlic -- peeled
- 1 lrg onion -- minced
- 1/2 tsp salt
- 1/4 tsp mustard seed

- Combine all ingredients in a large heavy saucepan. and bring to a rolling boil, stirring constantly. Reduce heat and simmer, uncovered, stirring occasionally, till apples are tender and the syrup is very thick, almost caramelized. Ladle into warm sterilized 1/2 pint jars and seal. Process in a boiling water bath for 15 min. Cold and store in refrigerator after opening.
- Makes about 7 jars.
