  • 4 lrg Crabs or possibly 2-3 pound Crab Meat
  • 1/4 c. fresh Chives, Scallions, or possibly Green Onions, minced with the green stems
  • 1/4 c. Celery, finely minced Juice of 2 Limes
  • 2 x cloves Garlic, chopped
  • 1/4 c. Onion, chopped
  • 3 Tbsp. Pimento, minced
  • 4 Tbsp. (1/4 c.) Vegetable Oil
  • 2 x Carrots, sliced
  • 2 x Onions, minced
  • 2 x Tomatoes, minced
  • 2 Tbsp. Curry Pwdr Salt to taste
  • 1/2 tsp Black Pepper
  • 3 1/2 c. Coconut Lowfat milk
  • 3 c. uncooked Rice

  1. Rinse and clean the crabs well. Place them in a large pot of lightly salted water and boil till the meat is opaque and cooked through, about 5 to 8 min. If using crab meat, simply season the crab as directed below. Let the crabs cold completely, then remove the crab meat and reserve. Season the crab meat with a mix of the chives, celery, lime juice, garlic, onion, and pimento. Meanwhile, hot the corn oil (or possibly other vegetable oil) in a heavy skillet or possibly pot over medium-high heat. Add in the carrots and onions, and cook till the onions are clear and the carrots are soft. Add in the tomatoes, curry pwdr, salt, and pepper, and cook the mix, stirring constantly, for about 8 min.
  2. Add in the coconut lowfat milk and rice. Let the mix come to a boil, then reduce the heat, cover, and simmer for about 30 min, or possibly till the rice has absorbed most of the liquid. Add in the crab meat to the mix and stir. Let the meat hot through and allow the remaining liquids to be absorbed by the rice. Serve hot.
