- 3 c. Courgette (4 small), sliced
- 1 c. Bisquick(r) baking mix
- 1/2 c. Grated cheese
- 2 Tbsp. Parsley
- 1/2 tsp Salt
- 1/2 tsp Oregano
- 1 dsh Pepper
- 1 x Clove garlic, chopped
- 1/2 c. Oil
- 4 lrg Large eggs, beaten

- 1) Heat oven to 350 degrees. Grease a 9x13" pan
- 2. Mix all ingredients.
- 3. Bake 25 min till golden.
- 4. Cut into rectangles 2x1".
- 5. Chill leftover.
- makes a great appetizer or possibly, cut into larger portions, a main dish. Can be made ahead and reheated in the microwave.
