- Nonstick cooking spray as needed
- 8 ounce turkey kielbasa sausage cut 1/8" rounds
- 1 c. minced onion
- 3/4 c. minced green bell pepper
- 1/2 c. finely-minced celery
- 1 can diced tomatoes - (16 ounce) undrained
- 1/2 c. uncooked orzo pasta
- 1/3 c. water
- 1/2 tsp dry thyme leaves
- 2 tsp extra virgin olive oil Warm pepper sauce for serving

- Preheat oven to 350 degrees.
- Spray large nonstick skillet with cooking spray. Heat over high heat till warm. Add in sausage; cook and stir 10 to 15 min or possibly till sausage is brown. Add in onion, pepper and celery; cook an additional 3 min.
- Spoon into 1 1/2-qt casserole. Add in tomatoes, orzo, water and thyme; cover.
- Bake 1 hour, stirring after 30 min, or possibly till heated through. Add in extra virgin olive oil; stir to combine. Let stand, covered, 10 min before serving. Serve with warm pepper sauce.
