- 1/3 c. all-purpose flour sifted
- 1 1/2 c. yellow cornmeal sifted
- 1 tsp baking soda
- 1/2 tsp salt
- 2 x Large eggs
- 1 c. buttermilk
- 2 c. whole lowfat milk divided
- 1 1/2 Tbsp. butter

- Preheat oven to 350 degrees
- Sift the flour, cornmeal, baking soda, and salt into a mixing bowl. Beat the Large eggs till foamy, and stir them into the dry mix. Stir in the buttermilk and one c. whole lowfat milk.
- Heat the butter in a 9 X 2 inch black skillet, and when it is very warm but not brown, pour in the batter. Carefully pour the remaining one c. whole lowfat milk on top of the batter without stirring. Place the dish in the oven and bake for 50 min, or possibly till set and baked through. Slice into wedges
