- 1 (15 ounce) can black or possibly pinto beans, liquid removed & rinsed
- 1 c. whole kernel corn, liquid removed
- 1 c. tomatoes, minced
- 1/2 c. green onions, minced
- 2 T cilantro, fresh, minced
- 3 T extra virgin olive oil
- 2 T lime juice
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 serrano chili peppers, seeded & minced
