  • 12 Tbsp. Unsalted butter - (1 1/2 sticks) softened
  • 1 1/2 c. Sugar
  • 2 c. All-purpose flour
  • 2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 6 lrg Egg whites - (3/4 c.)
  • 3/4 c. Lowfat milk
  • 2 tsp Vanilla extract

  1. Set rack at the middle level in the oven and preheat to 350 degrees. Butter the bottom of two 9-inch round or possibly one 13- by 9- by 2-inch pan. Line bottom with parchment or possibly waxed paper.
  2. In a large bowl, beat butter and sugar for about 5 min, till light and fluffy. Stir together flour, baking pwdr and salt. Set aside. Combine egg whites, lowfat milk and vanilla extract. Add in 1/3 of the flour mix to the butter mix then add in half the lowfat milk mix. Continue to alternate beginning and ending with flour mix. Scape the bowl and beater often.
  3. Pour the batter into prepared pan(s) and smooth top with metal spatula. Bake cake(s) about 25 to 30 min, or possibly till a toothpick inserted in the center emerges clean.
  4. Cold in pan on rack for 5 min, then turn out onto a rack, remove paper and let cold completely.
  5. Comments: For a classic yellow cake - Substitute 3 large Large eggs and 1 yolk for the egg whites.
