- 2 c. C.
- 8 x Green New Mexican chiles, roasted, peeled, stems and Seeds removed, minced
- 1 med Onion, minced
- 2 x Cloves garlic, minced
- 2 Tbsp. Vegetable oil
- 1 med Tomato, peeled and minced (optional)
- 1/2 tsp Grnd cumin (optional)
- 2 c. Water

- Saute/fry the onion and garlic in the oil till softened.
- Add in the remaining ingredients, bring to a boil, reduce heat, and simmer for 30 min.
- Puree in blender for a smoother sauce. Eliminate the tomato for a "purist's" sauce.
