- 1 med cabbage minced, (2 quarts)
- 6 med onions minced
- 6 x green peppers coarsely minced
- 6 x sweet red peppers coarsely minced
- 1 quart minced green tomatoes
- 1/4 c. pickling salt
- 2 Tbsp. prepared mustard
- 6 c. vinegar, 5% acidity
- 2 1/2 c. sugar
- 1 1/2 tsp grnd turmeric
- 1 tsp grnd ginger
- 2 Tbsp. mustard seeds
- 1 Tbsp. mixed pickling spices

- Combine cabbage, onion, peppers, tomatoes, and salt in large bowl. Cover; let stand overnight. Drain.
- Mix mustard with a little vinegar in kettle; add in remaining vinegar, sugar, turmeric, ginger, mustard seeds, and pickling spices; simmer 20 min. Add in vegetables; simmer 10 min. Immediately ladle into 7 warm, sterilized pint jars, filling to within 1/4-inch from the top. Adjust lids.
- Process in boiling water 5 min. Start to count the processing time when water in canner returns to boiling.
- Remove jars. Cold on wire racks 12 to 14 hrs. Check jars for airtight seal.
- This recipe yields 7 pints.
