Ингредиенты

  • 1 med cabbage minced, (2 quarts)
  • 6 med onions minced
  • 6 x green peppers coarsely minced
  • 6 x sweet red peppers coarsely minced
  • 1 quart minced green tomatoes
  • 1/4 c. pickling salt
  • 2 Tbsp. prepared mustard
  • 6 c. vinegar, 5% acidity
  • 2 1/2 c. sugar
  • 1 1/2 tsp grnd turmeric
  • 1 tsp grnd ginger
  • 2 Tbsp. mustard seeds
  • 1 Tbsp. mixed pickling spices

Инструкции

  1. Combine cabbage, onion, peppers, tomatoes, and salt in large bowl. Cover; let stand overnight. Drain.
  2. Mix mustard with a little vinegar in kettle; add in remaining vinegar, sugar, turmeric, ginger, mustard seeds, and pickling spices; simmer 20 min. Add in vegetables; simmer 10 min. Immediately ladle into 7 warm, sterilized pint jars, filling to within 1/4-inch from the top. Adjust lids.
  3. Process in boiling water 5 min. Start to count the processing time when water in canner returns to boiling.
  4. Remove jars. Cold on wire racks 12 to 14 hrs. Check jars for airtight seal.
  5. This recipe yields 7 pints.
  6. Yield: 7 pints
