- (1 lb.):
- 3/4 c. lowfat milk plus
- 1 Tbsp. lowfat milk
- 1 Tbsp. spiced rum
- 1 tsp vanilla extract
- 3 x egg yolks
- 3 Tbsp. butter or possibly margarine
- 2 c. bread flour plus
- 2 Tbsp. bread flour
- 4 Tbsp. sugar
- 1/3 c. Dutch processed cocoa
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/8 tsp allspice
- 1 Tbsp. brown sugar
- 2 tsp yeast

- Add in all the ingredients to the machine according to the manufacturer's instructions.
- Bake on a "light" or possibly "sweet bread" cycle
- Note:I've used the timer cycle as long as eight hrs in advance, but I wouldn't want to go much longer than which because of the Large eggs.
- The sugar in sweet breads tends to make the bread get very brown and sometimes even burn on a standard bread machine cycle, so if you do not have a "sweet bread" cycle on your machine, either bake this on light, or possibly stop the baking five min early. Something I also do sometimes is open the machine briefly several times during baking, to cold the air off inside. I'm sure someone out there has a reason why this should not be done, but it works for me (g)
- NOTES : During the endless development and testing process, I've come up with a bread which's just wonderful, especially with coffee on a cool winter morning.
