%20and%20it%20tasted%20just%20fine.%20%20The%20next%20time%20I%20made%20this%20I%20used%20Dove%20Chocolate...1%20step%20above%20Hershey%20in%20my%20book...and%20it%20also%20tasted%20fine,%20and%20maybe%20even%20a%20bit%20richer.%20%20But%20the%20last%20few%20times%20I've%20made%20this%20I%20have%20used%20Scharffen%20Berger's%2070%25%20Cacao%20Bittersweet%20Chocolate...and%20I'm%20here%20to%20tell%20you%20it%20made%20all%20the%20difference%20in%20the%20world!%20%20It%20turned%20an%20ordinary%20tasting%20chocolate%20mousse%20into%20such%20a%20decadent%20dessert%20I%20was%20immediately%20struck%20with%20a%20%22cuckoo%20for%20Cocoa%20Puffs%22%20kind%20of%20feeling!%3C/p%3E%3Cp%3EJust%20thinking%20about%20this%20mousse%20makes%20my%20heart%20race%20-%20so%20let's%20take%20a%20minute%20to%20slow%20things%20down,%20shall%20we?%20%20Last%20Saturday%20the%20mister%20and%20I%20finally%20made%20it%20to%20Thoa's%20in%20Seattle,%20right%20across%20from%20the%20new%20Four%20Seasons%20on%20Union...you%20must%20put%20this%20on%20your%20Hit%20Parade!%20%20Thoa's%20(pronounced%20Twah's)%20is%20a%20Vietnamese-meets-Northwest-Fusion%20kind%20of%20place%20-%20the%20food%20is%20incredibly%20fresh%20and%20we%20loved%20every%20bite.%20%20We%20started%20with%20soft%20shell%20crab%20spring%20rolls,%20ate%20our%20way%20through%20steak%20frites%20followed%20by%20the%20best%20Pho%20I've%20ever%20had...so%20we%20had%20to%20do%20some%20serious%20walking%20after%20lunch...of%20course,%20a%20visit%20to%20Seattle%20would%20not%20be%20complete%20without%20a%20stop%20to%20see%20Sasquatch...or%20Market%20Spice...or%20the%20Flying%20Fish%20or%20the%20purchase%20of%20fresh%20fruit%20and%20veggies...we%20passed%20by%20the%20French,%20Greek%20and%20Russian%20Bakeries%20because%20we%20were%20still%20full%20from%20lunch%20and%20our%20last%20stop%20was%20Sur%20La%20Table%20because%20they%20carry%20Scharffen%20Berger%20Chocolate%20and%20I%20was%20planning%20on%20making%20Chocolate%20Cherry%20Mousse%20when%20we%20got%20home.%3C/p%3E%3Cp%3EThe%20milk/cream%20is%20heated%20on%20the%20stove%20top%20just%20until%20hot,%20then%20poured%20over%20the%20chocolate%20in%20a%20blender...and%20just%20like%20that,%20presto-chango,%20you've%20got%20yourself%20a%20fantastic%20mousse...ready%20to%20be%20topped%20with%20a%20drizzle%20of%20cream%20and%20chocolate%20shavings...definitely%20company%20worthy...definitely%20coma%20worthy...5%20dangs%20my%20friends...FIVE%20in%20FIVE!%3C/p%3E%3Cp%3EHeat%20milk,%20cream,%20salt%20and%20espresso%20powder%20in%20a%20small%20saucepan%20over%20medium-high%20heat,%20mixing%20well,%20until%20very%20hot%20but%20do%20not%20allow%20to%20boil.%20%20Chop%20chocolate%20into%20small%20pieces%20and%20put%20in%20a%20blender.%20%20When%20milk%20mixture%20is%20hot,%20pour%20over%20chocolate%20in%20blender%20and%20let%20sit%20for%20about%2010%20seconds.%20%20Put%20lid%20on%20blender%20and%20blend%20on%20low%20speed%20until%20chocolate%20is%20melted%20and%20mixture%20is%20smooth,%20then%20blend%20on%20medium%20speed%20for%2030%20seconds.%20%20Add%20egg%20whites%20one%20at%20a%20time,%20blending%20on%20medium%20speed%20after%20each%20addition,%20then%20add%20cherry%20whiskey/flavoring%20and%20blend%20again%20for%20about%2030%20seconds.%20%20Pour%20into%204%20small%20serving%20dishes%20and%20allow%20to%20sit%20on%20the%20counter%20for%20about%205%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20make%20the%20cream%20topping.%20%20In%20the%20bowl%20of%20an%20electric%20mixer%20combine%20heavy%20cream,%20powdered%20sugar%20and%20vanilla%20and%20mix%20on%20high%20just%20until%20cream%20begins%20to%20thicken%20a%20bit.%20%20Spoon%20cream%20over%20chocolate.%20%20Top%20with%20chocolate%20shavings.%20%20If%20you%20like%20your%20mousse%20cold,%20then%20refrigerate%20for%20about%202%20hours.%20%20If%20room%20temperature%20is%20okay%20with%20you,%20then%20dig%20in%20immediately!%20%20Serves%204.%3C/p%3E%3Cp%3E%22Love%20is%20much%20nicer%20to%20be%20in%20than%20an%20automobile%20accident,%20a%20tight%20girdle,%20a%20higher%20tax%20bracket%20or%20a%20holding%20pattern%20over%20Philadelphia.%22%20%20~Judith%20Viorst%3C/p%3E%3Cp%3EOne%20year%20ago:%20%20Old%20Sweater,%20New%20Pillow%3C/p%3E%3Cp%3ETwo%20years%20ago:%20%20A%20Great%20Idea%20Made%20Even%20Better%3C/p%3E){kind=link}
