- 2 c. water
- 1 1/2 lbs. spareribs, cut into 1 inch lengths
- 1/4 c. soy sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tbsp. sherry
- 3 tbsp. each sugar and cider vinegar
- 2 tbsp. cornstarch
- 1/2 c. water

- Heat a heavy pan, add in water, ribs, soy sauce and salt; when mix boils, reduce heat and simmer for 1 hour. Add in 1 tsp. sugar and sherry. Turn heat high and continue to cook till the liquid is all evaporated. Blend remaining ingredients and pour slowly over ribs. Cook about 2 min. Place ribs on a flat dish and top with sauce. Makes 3 or possibly 4 servings.
