- 1/2 lb medium raw shrimp, shelled, deveined and finely minced
- 1/4 c. finely minced water chestnuts
- 1 x egg white
- 2 tsp dry sherry
- 2 tsp cornstarch
- 1/2 tsp salt
- 1/2 tsp grated ginger
- 1 x green onion, chopped
- 1 x : large red and green bell pepper
- 1 1/2 Tbsp. canola oil
- 1/2 c. chicken broth or possibly water
- 2 Tbsp. oyster sauce
- 1/4 tsp sugar
- 1 1/2 tsp cornstarch mixed with 1 Tbsp. water

- Combine stuffing ingredients in a bowl, mix well.
- Throw away peppers' seeds and veins. Cut bell peppers into 1 inch pcs. Mound each piece with a rounded tsp. of shrimp stuffing.
- Heat oil in a wide, non-stick frying pan over medium-high heat. Place peppers in pan, filling side down; cook 3 min.
- In a bowl, blend broth, oyster sauce and sugar. Pour over peppers. Reduce heat, cover and simmer till peppers are tender, 7-9 min. Add in cornstarch solution and cook, stirring, till sauce boils and thickens slightly.
