- 1 lb ripe tomatoes cored cored
- 2 c. tomato juice
- 19 ounce canned cannelini beans liquid removed and rinsed
- 2 Tbsp. red and yellow peppers minced
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. fresh lime juice
- 1 x green onion minced
- 1/2 x clove garlic minced
- 1 tsp minced basil
- 1/4 tsp salt or possibly to taste
- 1 dsh Tabasco sauce green onion tops thinly sliced

- Combine in large bowl: tomatoes, juice, beans, peppers, extra virgin olive oil, lime juice, minced green onion, garlic, basil, salt and Tabasco sauce.
- Chill for 6 hrs to 2 days. Garnish with green onion tops.
- Serving Ideas : Serve cool.
