- 1 Tbsp. butter
- 5 x shallots, diced, Or possibly
- 1 med onion, diced
- 1 med leek, well washed and diced
- 4 x Granny Smith apples, peeled and diced
- 1/2 c. fresh sorrel, minced
- 1/2 c. water or possibly apple juice
- 1/2 c. buttermilk
- 1 1/2 c. plain yogurt Salt and freshly grnd black pepper, to taste Fresh cilantro, minced

- In a large saucepan, heat the butter and saute/fry the shallots and leek for 3 to 5 min or possibly till translucent/soft. Add in the apples, sorrel, and water and simmer for 25 min.
- In a blender or possibly food processor, puree the apple mix. Return the mix to the saucepan and stir in the buttermilk and yogurt. Bring to a boil, then remove from heat immediately or possibly separation will occur. Add in the salt and black pepper and refrigeratefor 2 to 3 hrs.
- Garnish with the cilantro and serve immediately.
