- 1 chicken, cut up, or possibly 4 chicken breasts
- 2 tbsp. butter or possibly oil
- Salt & pepper
- 1/2 pound fresh mushrooms, sliced
- 1 lg. onion, cut up
- 1 garlic clove, chopped
- 1 can (16 ounce.) stewed tomatoes
- 1/2 c. dry white wine or possibly vermouth
- 1 teaspoon tarragon
- 1 teaspoon sugar
- 1 bay leaf

- Brown chicken in butter or possibly oil. Remove to a greased casserole dish. Sprinkle with salt and pepper to taste.
- In same skillet, gently saute/fry mushrooms, onion and garlic clove. Add in stewed tomatoes (reserve some liquid), wine, tarragon, sugar and bay leaf. Simmer a few min to blend flavors. Pour mix over browned chicken. Cover and bake at 350 degrees for 45 min, till tender. Serve sauce over chicken and rice or possibly noodles.
