  • 1/2 c. minced onion
  • 1 (14 1/2 ounce) can whole tomatoes, liquid removed, minced
  • 2/3 c. minced dry apricots
  • 1/2 c. apricot preserves
  • 1 cinnamon stick
  • 1 T minced fresh cilantro leaves (or possibly 1 teaspoon dry cilantro leaves)
  • 1 teaspoon minced fresh ginger root or possibly 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 whole chicken breasts, skinned, boned, halved
  • 1 c. uncooked couscous

  1. Spray medium nonstick saucepan with nonstick cooking spray. Heat over medium heat till hot. Add in onion; cook and stir 3 min. Add in remaining salsa ingredients. Bring to a boil; reduce heat. Simmer uncovered 20 to 30 min or possibly till sauce thickens, stirring occasionally. Keep salsa warm. When ready to serve, remove and throw away cinnamon stick.
