- 1 x red onion sliced 1/2" thick
- 1 tsp crushed coriander seeds
- 1 tsp fresh minced thyme
- 1/2 c. white wine
- 2 Tbsp. extra virgin olive oil
- 1 tsp lemon juice
- 4 slc white bread crusts removed, and cubed
- 3 Tbsp. teriyaki sauce
- 1 lb grnd chicken or possibly turkey (preferably leg meat)
- 3 Tbsp. finely-diced onion
- 1 x garlic clove chopped
- 1 tsp fresh minced parsley
- 1 tsp sesame oil
- 2 tsp mustard
- 1 x egg slightly beaten
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/4 tsp nutmeg
- 3 dsh warm sauce - (to 4)
- 1 sm can pineapple rings liquid removed
- 1 tsp freshly-crushed pink peppercorns
- 1/4 tsp salt Extra virgin olive oil spray as needed

- To make the Grilled Onions: Place onion slices in a shallow baking dish. In a small saucepan, combine coriander seeds, thyme, wine, oil, and lemon juice; bring to a boil over medium heat. Let cold slightly, then pour mix over onions. Cover and chill for 2 hrs.
- To make the Burgers: In a large bowl, combine cubed bread with teriyaki sauce and let rest for 5 min. Mix in grnd meat. In a small pan, saute/fry onions, garlic, and parsley in sesame oil for 1 minute. Add in to grnd meat mix and combine. Add in mustard, egg, salt, pepper, nutmeg, and warm sauce. Mix well. Mold into 4 patties and chill, covered, for 1 hour.
- To make the Grilled Pineapple: Place pineapple slices on paper towels to drain. Remove and sprinkle with pink peppercorns and salt. Spray lightly with oil. Set aside.
- Spray burgers lightly with oil and place in center of cooking grate. Grill 6 to 8 min till well done and internal temperature registers 180 degrees, turning once halfway through grilling time.
- Place onions on grill for 4 to 6 min, turning once halfway through grilling time, and grill pineapple for 1 to 2 min, turning once halfway through grilling time. Place burgers on grilled buns; top with pineapple and onion.
- This recipe yields 4 servings.
