Chicken Pot Roast with Apples and Cider is a comforting winter dinner, perfumed with apples and rosemary. Your entire family will adore this one pot meal. Affiliate links have been used to link to items I am discussing.
This is another one of those stories where I discover a gem of a cookbook, but it takes me a while to realize it. I freely confess it is because I own too damn many such a joyful abundance of cookbooks–but in the end I always end up loving them all. Or they get gifted or tossed. .%20Slow%20cooking%20dishes%20that%20also%20warm%20the%20kitchen.%20Picture%20a%20hunting%20lodge%E2%80%93if%20the%20idea%20of%20cooking%20in%20a%20hunting%20lodge%20appeals%20to%20you,%20you%20would%20love%20this%20book.%20Which,%20by%20the%20way,%20means%20it%20is%20not%20really%20for%20vegetarians.%20Although%20you%20could%20still%20love%20her%20writing%20about%20an%20apple.%20Seriously,%20I%20fell%20in%20love%20with%20the%20book%20just%20from%20reading%20the%20intro%20to%20the%20apple%20(and%20pear)%20chapter.%20Which%20led%20me%20to%20reading%20and%20loving%20the%20whole%20book.%20Which%20leads%20me%20to%20this%20chicken%20pot%20roast.%3C/p%3E%3Cp%3EMy%20mom%20came%20for%20Holiday%20cookie%20baking%20(yes%20I%20am%20running%20behind%E2%80%93I%20was%20so%20determined%20to%20get%20proper%20holiday%20dishes%20posted%20that%20other%20dishes%20have%20been%20languishing%20in%20my%20photography%20folders),%20and%20on%20a%20complete%20whim%20I%20decided%20I%20was%20making%20this%20dish.%20The%20relevance%20of%20this%20is%20yes%20I%20succeeded,%20yes%20it%20was%20loved,%20but%20no%20I%20did%20not%20get%20it%20done%20in%20time%20to%20take%20advantage%20of%20proper%20light.%20I%20think%20the%20photos%20are%20decent%20but%20there%20is%20definite%20graininess%20from%20the%20dark.%20We%E2%80%99ll%20just%20blame%20the%20fact%20that%20I%20was%20stirring%20caramel%20and%20slicing%20biscotti,%20etc.%20They%20seem%20a%20pretty%20good%20trade%20off%20for%20light,%20really.%20But%20this%20recipe%20is%20fantastic,%20even%20if%20not%20shown%20in%20its%20best,%20ahem,%20light%20(sorry%20could%20not%20resist).%20Everyone%20loved%20it.%3C/p%3E%3Cp%3EChicken%20Pot%20Roast%20with%20Apples%20and%20Cider%20%20%20Adapted%20from%20Diana%20Henry.%20%20Author:%20TheSpicedLife%20Recipe%20type:%20Entree%20Cuisine:%20British%20%20%20Ingredients%3C/p%3E%3Cp%3E3%20T%20butter,%20divided%203%C2%BD-4%20lbs%20chicken%20%C2%BD%20lb%20sliced%20bacon,%20cut%20into%201-inch%20pieces%202%20medium%20onions,%20sliced%201%20cup%20dry%20hard%20cider%20(I%20love%20Magners)%2010%20baby%20potatoes,%20or%204-5%20medium%20or%203%20large%20potatoes%20cut%20into%20chunks%20(for%20the%20babies,%20leave%20whole)%20salt%20and%20pepper%20to%20taste%204%20sprigs%20fresh%20rosemary%203%20large%20or%205%20small%20sweet%20crisp%20apples,%20such%20as%20Fuji%20or%20Gala,%20peeled,%20cored%20and%20sliced%20into%20wedges%201-2%20t%20sugar%20%E2%85%94%20cup%20heavy%20cream%201%20T%20Dijon%20or%20whole%20grain%20mustard%20%20%20Instructions%3C/p%3E%3Cp%3ESprinkle%20the%20chicken%20with%20salt%20and%20pepper.%20Let%20stand%20for%2015%20minutes.%20Preheat%20the%20oven%20to%20325%20F.%20Heat%20half%20of%20the%20butter%20in%20a%20large%20Dutch%20oven%20over%20medium%20heat.%20When%20it%20has%20melted%20and%20is%20hot,%20add%20the%20chicken%20and%20brown%20on%20all%20sides.%20Be%20gentle%20when%20turning%20it,%20so%20as%20to%20avoid%20ripping%20the%20skin%20(2%20large%20wooden%20spoons%20work%20well).%20Remove%20the%20chicken%20to%20a%20large%20bowl.%20Add%20the%20chopped%20bacon%20to%20the%20pot%20and%20cook%20until%20crisp.%20Add%20the%20onions%20to%20the%20pot%20with%20bacon%20along%20with%20a%20pinch%20of%20salt.%20Stir,%20cooking,%20until%20the%20onions%20are%20translucent.%20Add%20the%20hard%20cider%20and%20rosemary.%20Mix,%20scraping%20up%20any%20bits%20stuck%20to%20the%20bottom%20of%20the%20pan.%20Add%20the%20potatoes%20and%20mix%20in.%20Add%20a%20few%20pinches%20of%20salt%20to%20taste%20as%20well%20as%20several%20turns%20of%20the%20pepper%20grinder.%20Place%20the%20chicken%20on%20top%20of%20the%20onions%20and%20potatoes.%20Bring%20to%20a%20boil,%20and%20then%20cover%20the%20pot%20with%20a%20heavy,%20fitted%20lid%20and%20place%20in%20the%20oven.%20Roast%20for%201%C2%BD%20hours,%20or%20until%20cooked%20through.%20When%20cooked%20through,%20the%20chicken,%20when%20pierced,%20will%20run%20with%20clear%20juices.%20While%20the%20chicken%20is%20cooking,%20heat%20a%20skillet%20(nonstick%20or%20cast%20iron)%20over%20medium%20high%20heat.%20Add%20the%20remaining%201%C2%BD%20tablespoons%20of%20butter.%20When%20it%20is%20melted,%20add%20the%20apples%20with%20some%20sugar%20to%20encourage%20browning%20and%20sweetness%20(use%20more%20sugar%20if%20you%20like%20it%20sweeter).%20I%20prefer%20my%20apples%20to%20have%20the%20slightest%20bite%20of%20crispiness%20at%20their%20center%20when%20cooked,%20so%20I%20removed%20them%20from%20the%20heat%20as%20soon%20as%20they%20got%20some%20color%20on%20them.%20Cook%20them%20a%20bit%20longer%20though%20if%20you%20want%20them%20meltingly%20tender.%20Remove%20the%20chicken%20from%20the%20oven%20when%20done.%20Carefully%20remove%20the%20whole%20chicken%20from%20the%20pot%20and%20place%20it%20on%20an%20oven%20safe%20dish%20or%20shallow%20bowl.%20Tent%20it%20with%20foil%20and%20place%20it%20in%20a%20warm%20oven%20(for%20my%20oven,%20I%20can%20just%20turn%20it%20off%20and%20it%20will%20retain%20the%20heat.%20If%20yours%20loses%20heat%20quickly%20then%20set%20it%20at%20180%20F).%20Bring%20the%20%22au%20jus%22%20to%20a%20boil%20in%20the%20pot.%20Stir%20in%20the%20mustard.%20Then%20add%20some%20of%20the%20au%20jus%20to%20the%20cream%20to%20warm%20the%20cream%20up%20(this%20will%20prevent%20it%20from%20curdling%20in%20shock).%20Turn%20the%20heat%20down%20and%20stir%20the%20warmed%20cream-au%20jus%20mixture%20into%20the%20pot.%20Let%20the%20sauce%20simmer--but%20not%20boil%20vigorously--until%20it%20coats%20the%20back%20of%20a%20spoon.%20This%20will%20probably%20take%20about%205%20minutes.%20Taste%20for%20more%20salt%20or%20pepper.%20Mix%20the%20apples%20into%20the%20pot.%20Serve%20joints%20of%20the%20chicken%20(if%20serving%20individually--you%20can%20also%20of%20course%20present%20the%20whole%20roasted%20chicken%20but%20we%20are%20not%20that%20fancy!)%20with%20potatoes%20and%20apples%20and%20the%20sauce.%20%203.4.3177%3C/p%3E%3Cp%3EFor%20the%20collage%20lovers%E2%80%A6.%3C/p%3E){kind=link}
