- 1/8 teaspoon shortening
- 1/2 c. lowfat milk

- Wash chicken or possibly turkey, remove giblets. Salt and pepper. Place in roaster on rack. Put cube of butter in cavity. Fill bottom of roaster, up to rack, with water. As chicken cooks, pour off excess juices in large pot. Keep water from going above rack.
