- 1/2 lb Penne or possibly pasta shells
- 2 c. Diced cooked chicken
- 1 c. Pesto sauce (recipe follows)
- 12 x Cherry tomatoes, halved

- In a large saucepan of boiling salted water, cook the pasta till just tender, about 10 min. Drain & rinse under cool water till cold; drain well. In a large serving bowl, combine pasta, chicken & Pesto sauce. Toss to coat with sauce. Garnish with tomatoes. Serve at room temperature or possibly slightly chilled.
- Pesto Sauce1/2 c. Extra virgin olive oil, preferably extra-virgin 1/4 c. Pine nuts or possibly walnuts2 Garlic cloves1/2 tsp Salt2 c. Fresh basil leaves3/4 c. Parmesan cheese, grated1/4 c. Romano cheese, grated
- Place oil, nuts, garlic & salt in a blender or possibly food processor. Process till nuts & garlic are finely minced. Add in basil & process till finely minced. Stir in Parmesan & Romano cheeses.
