- 1 can (19-oz) chick-peas
- 2 x Garlic cloves
- 1/2 med Onion
- 1 Tbsp. Fresh rosemary leaves
- 1/4 c. Minced fresh flat-leafed parsley leaves
- 1/2 c. Fine fresh bread crumbs
- 3/4 c. Walnuts, toasted and minced
- 1 lrg Egg
- 2 Tbsp. Extra virgin olive oil
- 4 x Sesame buns
- 4 slc Beefsteak tomato
- 4 slc Red onion

- In a colander rinse and drain chick-peas. In a food processor pulse garlic, onion, and rosemary till minced coarse. Add in chick-peas, parsley, and bread crumbs and pulse till just combined. Transfer mix to a bowl and stir in walnuts, egg, and salt and pepper to taste till well combined.
- Form mix into four 3-inch patties. Refrigeratepatties, covered, at least 1 hour and up to 1 day.
- In a large skillet heat oil over moderate heat till warm but not smoking and cook patties till golden, about 4 min on each side. Toast sesame buns. Transfer burgers to buns and top with tomato and onion.
- Serves 4.
