- 3 c. Cauliflower, cut in pcs
- 1 jar (2 ounce.) pimento, liquid removed
- 2 Tbsp. Minced green pepper
- 1 can (8 ounce.) sliced water chestnuts
- 2 x Hard cooked Large eggs minced, optional
- 1 sm Onion, minced
- 1 c. Grated cheddar cheese
- 4 Tbsp. Butter, melted
- 3 Tbsp. Flour
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 2 c. Lowfat milk
- 1 c. American cheese, cubed
- 1 c. Cheese crackers, crushed
- 3 Tbsp. Grated Parmesan cheese

- Layer cauliflower, pimento, green pepper, water chestnuts, Large eggs, onion and cheese in 2 1/2 qt casserole. Make sauce by melting butter and stirring in flour, salt and pepper. Cook and stir 1 minute. Add in lowfat milk gradually. Add in cheese and cook till thickened. Pour over vegetables. Combine topping ingredients; sprinkle over all. Bake at 350 for 30 min.
