- 2 lb chanterelles cleaned, halved
- 2 lb shiitakes cleaned, and stems removed
- 3 c. tomato juice
- 3 c. orange juice
- 2 c. dry black beans
- 1 bn fresh thyme
- 1/4 c. peanut oil
- 2 lrg onions diced
- 8 x garlic cloves chopped
- 2 lrg sweet green peppers diced
- 2 x ancho chiles chopped
- 1 x chipotle chile chopped
- 1 x pasilla chili chopped
- 1/2 x habenerro chile chopped
- 15 x plum tomatoes seeded, quartered
- 2 c. fresh corn kernels
- 1 bn scallions diced
- 3 Tbsp. toasted cumin seeds grnd
- 3 Tbsp. oregano
- 1 1/2 Tbsp. thyme
- 2 c. sour cherries
Инструкции
- Set mushrooms aside. Boil juices, then add in thyme and beans. Simmer covered 1 1/2 hrs.
- Heat 1/2 of oil, add in onion and garlic and brown. Add in pepper, chiles, tomatoes and simmer 20 min; add in cumin, scallion, oregano, thyme and cumin and simmer 20 min; add in beans and simmer.
- While beans simmer, heat remaining oil in saute/fry pan till smoking warm. Add in mushrooms and saute/fry 5 min. Add in to chile-bean mix, stir well and simmer 20 min. Add in cherries and serve.
